Disneyland November 2017

I went to Disneyland and California Adventure during Veteran’s Day weekend to celebrate my sister’s birthday. It was so much fun! It was a nice change of weather since I live in northern California. I love the warmth and sun. I am not a huge fan of cold and cloudy weather.

Anyway, the main reason why we went was that they will be closing down a lot of rides for a while to build/redesign new rides. One of them is California Screamin. They are also closing my favorite restaurant in California Adventure, the Cove Bar. They will probably open it up again after construction but I am not sure if they will be keeping the same name/food.

First day was Disneyland.  My plane landed in Orange county around 9:30 AM and we didn’t get to Disneyland until about 11AM. My sis and I took pictures and decided to eat lunch in the park. I ordered a turkey sandwich with chips and my sister ordered the grilled cheese sandwich with the tomato soup. The tomato soup was so good. Dip the grilled cheese in it, it was delicious!







After that, we decided to go on all the rides! Space mountain, Matterhorn Bobsleds, Pirates of the Caribbean, Star Tours, all of it. It was weird since it was more crowded than the last time I went back in June. The wait was longer than what I was used to. Maybe it’s because we went during Veteran’s Day weekend and Disneyland also just started their holiday season.

The rides were fun, the holiday decorations were pretty, and the castle was absolutely beautiful at night, especially with the lights! We just had to take pictures.

My sis and I ate dinner at Naples, in downtown Disney. Man, the food is expensive! Also, the waits for the other restaurants were so long. I ended up getting an eggplant parmesan dish while my sister ordered a chicken alfredo type of dish. It was pretty good but I don’t think it was worth the price that we paid for. Oh well. I knew eating at Disney was going to be expensive.

After dinner, we headed back to the park to watch the fireworks! We just had to watch the holiday themed shows.

The next day was California Adventures!


We got up a little late and ended up getting to the park around 11. There was no line getting in, which was awesome! The first thing we did was get a fast pass for the World of Color Water show (which was holiday themed) and then we went to the Cove Bar to eat brunch.

The reason we went to the Cove Bar is because we wanted to drink the Fun Wheel drink and eat their lobster nachos. Another reason is that they will be closing down this place while they are redesigning and doing construction in the park. My guess is that it won’t be called the Cove Bar anymore once it’s done.

Anyway, we ordered the Earthquake, Fun Wheel, Lobster Nachos, spinach and artichoke dip, and the Fajita Quesadilla Rolls.


The food was so good but we were stuffed after eating it. I think we ordered too much and we ended up eating most of it but not all of it.

We went on the Ferris Wheel (the swinging one) and California Screamin after eating (don’t worry, it was at least a 45 minute wait for California Screamin and a 15 minute wait for the Ferris Wheel). I heard that they were going to make California Screamin the Incredibles themed, so we had to go on that at least once before they re-brand it.  The Ferris Wheel is also supposed to be replaced with Pixar characters.

We went on a lot of rides after this, including going on the Grizzly River Run 3 times in a row! There was literally no line (probably because it wasn’t warm and sunny) but the ride was still fun! We also went on Soarin Around the World, Radiator Springs Racers, Guardians of the Galaxy, and a lot more! It was fun but the waits were long. Getting fast passes were a waste too, since you could only get one every few hours and the time would be for 4 hours once you get the fast pass.


We also ate a corn dog and churros at the park. That was our “snack” before watching the World of Color show. We got a great spot to watch it and I recorded the whole thing. I suggest going at least a half hour early to get a good spot. After all, it is holiday themed and I rarely get to go to Disneyland!


We were pretty much done after watching the show. We looked through the stores to buy some souvenirs. Then, we headed out and ate dinner at a sushi place!


Yes, there was a lot of eating out but hey, don’t restrict yourself too much while on vacation. You want to enjoy it!

The next day was pretty chill. I hadn’t gotten much sleep at all the few nights before so I slept in! Then, my sister and I went to eat Korean food. We got kimchi fried rice with cheese on it,  fried chicken, and kimbap.


The food was delicious. I rarely eat Korean food and this was pretty good. I think the place was called Chan Chan’s. It’s in Orange county.

After, we ate ice cream at Cauldrons. It’s nitrogen ice cream! The cone is an egg puff but churro flavored! The ice cream had oreos in it. It was delicious!


After all the food, we went shopping at Daiso and TJ Maxx. Then, it was time for me to go home.

I had a lot of fun during my trip and at a lot of delicious food. It was a nice weekend get a way.

Weekly Meals and Workouts 105

Happy Sunday everyone. How are you guys doing today? I’m doing alright, thank you very much. I stayed up very late last night (almost 3am!) and I am extremely tired. I almost never stay up that late. I was hanging out with mi novio and his friends and they decided to watch the new X-Men movie at like 10:30pm. It was a good movie and I enjoyed watching it.

However, since I stayed up so late, I didn’t wake up early enough to run this morning. I didn’t even run yesterday either and did 2 PIIT workouts instead. Today, I just did a pilates workout.

Anyway, before I get into anything else, here is my plan for the week.

Breakfasts –  “healthy” poptarts, avocado toast w/ egg, or WW English Muffin Pizzas AND COFFEE (of course)

Lunches- salmon cakes w/ brown rice OR eggplant parmesan w/ WW Pasta OR leftovers from dinner

Dinners- rice, veggies, some sort of protein (whatever my parents cook)


Sunday- pilates

Monday-  6 mile run + abs

Tuesday-  6 mile run + abs

Wednesday- yoga or REST

Thursday-6 mile run + abs

Friday- PIIT

Saturday- rest

I have my 10K run next Sunday and I can’t wait! I have to follow this week’s workout plan since it’s coming up so soon. I’ll be running it with a few friends and it’s going to exciting. And, as I mentioned before, there will be a mimosa garden! What a great way to celebrate graduating!

It’s the holiday season and I know that people are busy. Weather it’s gift shopping, going to parties, people loving celebrating the holidays. So, why am I saying this? Well, the Food and Nutrition Club had a Cookie Jar Fundraiser. They were Whole Wheat Chocolate Chip cookies. We also sold Peppermint Hot Chocolate and Seasoning’s Greetings.

For the cookies, I used vegetable oil instead of margarine or butter. Sorry for the bad quality of the pictures!

Also lately, I went food shopping. I also have avocados, fruits, and vegetables but I decided not to take all of it out just for a picture. My parents buy  groceries but the thing is that, I buy the foods that I want since we have different food preferences. I don’t have to worry about the produce (fruits and veggies), the meat, and tofu.



I love the Kashi Mediterranean Pizza, which is why I bought two boxes of them. It’s the best tasting “healthy” pizza I’ve tried so far, except for Amy’s Spinach Pizza. The thing is that, Amy’s Spinach pizza is more expensive and it’s smaller. I want the most for my $$  and the Mediterranean Pizza is still good.

I like the taste of organic brown eggs but in general, eggs are eggs. The organic brown eggs are much more expensive too, so, buying the regular white eggs is still good. It’s a great source of protein.

I also bought the canned soup’s because it’s getting cold here. Hot soup is great to eat on a cold, winter day.

Fitness Friday 35 + First week back at school

Happy Friday everyone. How are you guys doing today? I’m doing great, thank you very much. Classes started this week and I have been busy. Anyway, I will talk about that later. First, here were my workouts for the week. Remember that I switched my long run days last weekend. I ran 11 miles on Saturday instead of Sunday.

Fitness Friday 9-5-14


It has been weird not being able to work out as much as I used to. I’m just busy now that I can only squeeze a workout in the morning. At least it is better than nothing. At least I get walks in during my break at work.

Back to school related stuff, I am taking 4 classes. Well, I would technically call it 3 classes. Chemistry, American Sign Language, Philosophy of Science, and PAL for Chemistry. PAL is Peer Assisted Learning and it is extra help for the class. I am also working too, which takes up my time as well.

In other news, look at what mi novio got for me.



Homemade peach jam, pickled peppers, pickled zucchini, and hot salsa. All of it is homemade! I tried the salsa and, wow. It is hot! I like it though. I love homemade foods.

That’s all my updates for me. I am sorry if I have not been posting as much but life happens! I’ll do my best to post at least three times a week: Fitness Friday, Weekly Meals and Workouts, as well as one random post.

Life Updates

I haven’t been as active on social media as I have been a couple weeks ago. I am really sorry about that but I have been extremely busy! Here are the two main reasons why:

  1. I have a job now. I work for the Department of Food and Agriculture.
  2. I will say this one in Spanish. Tengo novio.

I work full days for my job, which keeps me pretty occupied. I wake up early to  exercise, shower, get dressed, go to work, and eat something as I work (in the early morning when I arrive). Sometimes, I do eat before heading out of the house if I have the time. After work is my relaxation time, where I either hang out with the novio, watch Switched at Birth, Criminal Minds, or Breaking Bad, or just read other blogs and maybe comment on a blog post or two. I can’t be online 24/7. He got me into watching Breaking Bad, which I thought I’d never watch. It’s a good show but it’s crazy!

All I can say is that my life is good right now. I have a good job (especially for a young student like me), my co-workers are awesome, and mi novio and my family are very supportive of me.

Mi novio can’t believe how much I eat in a day. Trust me. The meal plans are just a general guideline. I never mention  portions. When we eat, I end up eating my portion plus at least ¼ of his. When we eat out, he is even more surprised, considering the huge portions. He wonders why I am not overweight! He says I have a fast metabolism from all the running I do. Go running! Haha.

On the job side, I have to say that I love my job. My co-workers are awesome and are easy to get along with and my boss is just amazing. We all help each other out and they are all very nice. It’s a good work environment, which I like.

My boss wanted to show me the lab a week or two ago, which is a different location from our office. The outside of the lab looked really nice, considering it’s a lab. The inside was nice too. I looked around and was introduced to the workers there. My boss talked to the other scientists there as well and got some work done. Then, he took me to Dos Coyotes for almuerzo. I ordered a vegetarian burrito! It was so good! Today, a group of us went out for some Japanese food. All of us get a long and work well together, which is important in a work/office environment.


Earlier this week, a co-worker brought in donuts. As you know, I rarely eat donuts. I don’t even remember the last time I ate one was. I ended up eating a chocolate chip donut. It was so good but it was a little sweet. It was nice of them to bring them in. Gracias!


On Monday, I went out to eat with family members that work in the downtown area. We went to a local sandwich shop (walking distance from all of us). Two cousins and my uncle (the one that runs) all went to eat. One of my cousins is into nutrition and the environment and we both decided to get two different types of veggie sandwiches. We shared both sandwiches so that we could try both of them. My uncle and other cousin ordered their own sandwiches con carne. It was a nice family lunch before we all had to go back to work.


I don’t want this post to be too long. I will talk about the interview in another post. That post will also have a few interview tips based on my own personal experience. One thing I will say about the interview is that it was almost an hour long and I didn’t expect that at all. We kept talking and asking questions and the time just flew. Most interviews are no more than 15- 20 minutes.
