Lately

Happy Sunday everyone. How are you guys doing today? I’m doing alright, thank you very much. I’ve just been very busy and everything. Then, I realized I haven’t posted in a while.  So, what have I been up to lately?

Well, for one thing, I did not workout since Wednesday last week. I got sick last week on Saturday. I am feeling better now but I want to fully recover before I start working out again. I’ll probably start working out again tomorrow.

Also, I was on vacation with my family. We went to Vegas last Thursday, Thanksgiving. We left Wednesday night and arrived in Vegas later on Thursday. I got sick on the way back home from Vegas (so sad). We didn’t do much in Vegas but I took some pictures. We explored the area, took pictures, and did a little shopping.

The past week has been crazy. On Tuesdays, my classes run all the way until night time. It’s crazy. Me, being sick, did not want to go to school and just rest the past Tuesday. However, I had a fitness test in my aerobics class (25% of our grade) and a presentation in my night class (worth 100 points). I suffered  pushed through the day and I finished everything. I had to present four times to four different groups. Yea, not fun but I did it. Even if you are not feeling well, you have to get your work done. That’s real life.

That is really it for now. I plan on going back into running. I miss it so much. But, I know starting it back up with be hard. I’ll push through it. My New Year’s Resolution is to be able to run the 30 miles a week liked I used to do. I will build it up and not just do it all at once.

Meals:

Breakfast: quesadilla w/ boca, avocado + coffee OR burrito w/eggs, boca, avocado, veggies + coffee

Snacks: apple, KIND bars

Lunch:  leftovers or pasta

Dinner: eat out OR rice, protein, vegetables

That is it for now. I will post about the Sports Nutrition Workshop in my next post. This week is dead week and next week is finals. Wish me luck!

Updates on Life

My summer class is done and it’s time for some relaxation. Well, until I start reviewing chemistry. I will be relaxing the rest of this week before I start reviewing. Let’s look at my past 6 weeks.

Here is what I did yesterday. After, I’ll show pictures of recent eats and other things I’ve been up to. I warn you there are a lot of pictures.

I went to Tower Cafe with family and friends. Here are some of the foods we ordered. I ordered the East African Veggie Burger. It has fries and a side of peanut sauce. I didn’t eat the fries and gave it to my cousin’s kid.

Tower Cafe is really popular here and we have to make reservations. It was my first time going, even though I’ve been living in the area my whole life! The atmosphere and food was amazing! The cheesecake wasn’t that great though.

Earlier yesterday, I also went to the mall with my family and friends. We also bought some gelato (so good!). I got a small scoop of Mocha Almond Fudge and Tiramisu.

I also bought a Caramel Macchiato Cupcake from Esther’s Cupcakes. I haven’t eaten the cupcake yet (I will tonight) but I tried the frosting and it is so good! It is not overly sweet. I bet the cupcake will be amazing. I’ll let you guys know in my  next post on how the cupcake tastes.

We also went to karaoke after eating at the Tower Cafe. I love singing.

Today, I went to Grocery Outlet and bought this stuff.

The Fiber One Protein Cranberry Almond will be my snack while working. The Health Valley Organic Sprouted Amaranth Flakes sounded good, so I had to buy it. And, it was only two dollars. You can’t beat the prices. The Fiber One was only one dollar. The tabouli was delicious too!  Not pictured is a Nature’s Path Frosted Lotta Chocolotta Toaster Pastries. It will also be a snack while working. I love that it is organic. It is not the healthiest thing in the world but if you are in a mood for a poptart, these are a better option. You can always make your own to make it even more healthier.

This is from World Market. I used this curry sauce to make the Chickpea Curry. The Strawberry Chocolate Spread is decent. It is a bit too sweet.

I guess that is it for now. I don’t want to bombard you guys with too many pictures. Last night was really fun celebrating a cousin’s birthday. Shopping, eating at Tower Cafe, and going to karaoke was fun. My birthday was fun too. I guess you can say that all birthdays are fun!

The past month, I also made a cake in a rice cooker, tried some other nutter butters, and tried the Chocolate Choco Chimps Cereal and Alpine Valley Sprouted Honey Wheat bread. The Vanilla Expresso Almond Butter was my favorite!

Fitness Friday 20

Happy Friday everyone. How are you guys doing today? I’m doing great, thank you very much. Finals are done and it’s summer vacation! Well, it is summer vacation until my summer class starts the week after next. Nutrition and Metabolism is going to be fun! I might post about things I learn in the class.

Anyway, let me show you guys my workouts before I forget.Fitness Friday 5-23-14   This week has been quite crazy! Finals, volunteering, etc. It’ll be worth it! Also, I haven’t been running as much. I probably won’t run the half-marathon, as I have said before. But, I’ll still be doing long runs on Sundays sometimes. For sure, I’ll be doing the Urban Cow Half-Marathon every year. Here’s a Blogilates workout video before I talk about things unrelated to fitness.

In other news, I realized that I have been looking up Disney songs in Spanish and Chinese. I love singing along in different languages. Well, to be more specific, I have been singing High School Musical songs. Don’t blame me. I have been actually singing songs to the Argentinean spin-off of High School Musical. It’s called “High School Musical: El Desafío, de Argentina”

The music is amazing. The song I have been obsessed with recently from that movie is called “Yo Sabía.” Translated, it means “I knew”.

Classes + Food from Tuscany

Happy Wednesday everyone. How are you guys doing on this fine Wednesday? I’m doing fine, thank you very much.

Today was the last meeting for the Food and Nutrition/Dietetics Club. We had a potluck! I made these gluten free chocolate chip cookies for the potluck. I also made extra to bring for my co-workers, since I go before heading to school. Everyone loved the cookies! At the potluck, there were also black bean brownies, cheese, vegetables with dip, fruit, etc. It was mainly sweets though but they were so good!

I am happy to say that I am one of the two new Public Relations Officers for the upcoming school year. I am so happy! I have so many ideas for the club!

I am also planning on taking a class during the summer but it is going to be expensive! I plan on taking Nutrition and Metabolism. I’ll see if I will take it during the summer. If not, I’ll take it during the regular semester.

In other news, my friend Ka, who is taking FACS110 ( a Food Management class), invited me to a dinner the class was catering. It’s their final project. They chose an Italian theme. More specifically, Tuscany. The dinner was delicious!

The biscotti was amazing! It was double chocolate chip biscotti and the other one was almond. The caprese salad tasted great too. There were tomatoes, mozzarella cheese, and pesto (from what I remember).  The pasta was also good too!

They did a great job catering the event. I felt like I was in a real restaurant (even though the dinner was held in a classroom, next to the kitchen). They decorated the room beautifully. Thank you for hosting the event! I cannot wait to take the class soon, with all the planning and cooking that goes along with it! Maybe I will choose a Chinese theme. =)

-I have. I took statistics during the summer last year and it was four days a week, with each class four hours long! It was a night class too!

P.S. My presentation on Cuba on Monday went pretty well. I got an A on the presentation! =)
