Featured in the school paper!

Happy Thursday everyone!

Do you guys remember in my last post that  I said today’s post will be interesting? Well, read the title of this post.  That’s the reason why. I am featured in the school paper this week! I’m so happy to be able to help motivate other students to live a healthy lifestyle.

They (the reporters) interviewed me last week and took pictures of me. I felt like a model in a photo shoot when they took pictures. There are more pictures in the print version of the paper.

Hey hey. What’s up, y’all? What have you been up to lately? I’ve been doing great, thank you very much. Here’s what’s been up since my post last Thursday.

  • For one thing, I ran 10 miles yesterday. I ran it at a really slow pace though. I’m pretty happy that I even finished the run, considering my calves were feeling really tight. It was such a hard run! Just to let you know, it takes time to build up to the distance.
  • Today, I ran 6 miles in the morning. In the afternoon, I went to the park with a few of my friends. We ran, did some push-ups, crunches, squats, tricep dips, etc.  After, we played tennis. It was so much fun. It’s been a while since I played tennis. FYI, you don’t want to play tennis with me because I suck at it. I hit the ball over the fence a couple times. No bueno.
  • One of my classmates in my Spanish class taught me some ballroom dancing today. It was fun. I didn’t know that he could dance. He said that since I can sing, I can dance too. Ehh, I don’t agree with that but, whatever.
  • My family went to Southern California the past weekend. It was a mini vacation since it lasted barely two days. 6-7 hour car ride there and a 6-7 hour car ride back.  As you can tell, I live in Northern California. Oh, the joy of car rides. The weather was unusually cold but I still had fun. We visited a lot of places (yes, including Chinatown) and other landmarks. I even posted a picture of Sprouts in Fullerton (healthy eating  on the road).

My Week

Happy Early Monday everyone. It’s 5 am! As you know, I start school today! I’m so excited.

Our winter break is unusually long. Most schools have gone back in session already. Sometimes, a too long of a break is bad. Anyway, I wanted to to a last lately recap of what I’ve been doing right before school starts!

So, the past week has been eating, hanging out with friends, volunteering, and hanging out with family. I’ve also been baking too! I’ll recap it day by day.

I made these refrigerator no bake cookies on Sunday. They are pretty much healthy except for the added sweetness (honey).



Wednesday was like any other Wednesday. Going downtown, doing some work. It was more eventful that day though.

Then on Thursday, I made my own homemade pizza. I made my own whole wheat pizza dough. I used a Trader Joe’s pasta sauce as the sauce and used cheese. Yummy! Sorry that it doesn’t look like a pizza from places like Pizza Hut or Round Tables. I’m still working on perfecting the look of the pizza!


Friday was volunteering again (Don’t worry. I will have a post about volunteering later on. I might even make a page for it). We made chickpea burgers and baked sweet potato fries after our nutrition lesson.

Saturday was family time. We also went to the park to play. Then, there was a big family dinner. I also tried the Tazo Iced Green Tea.


Yesterday, some family friends came over. We baked  vegan chocolate cupcakes.


Then, we went to the park and played. They are mainly younger kids (9-12 years old). They played lava monster. I played with them for a little bit but then  I went on the swings.

I just thought I’d stop by and tell you guys what I’ve been up to!

Most of it is food related (well, actually, almost all of it!). I love food shopping more than going to the mall. Am I weird?

Anyway, I mentioned that on Friday, I volunteered to be a Nutrition Educator. It’s a 4 week long program and then it restarts again. It was pretty interesting to hear what the students had to say. They were really engaging and were really interested. We will see how it turns out next week.

Also, lately, I’ve been doing some grocery shopping. Here are a ton of pics I took of some of the groceries from the past couple weeks. We always have fruits and vegetables in the house but I never take a picture of them.

As for restaurant eats, my cousin and I love trying out healthy places out here. Lately, we’ve been trying out Vegan places. We went to this awesome place called the Plum Cafe & Bakery. It’s vegan and they use all organic foods/ingredients. I ordered the Sweet Potato Avocado Panini and it was delicious! It came with a salad too. We also ordered some baked garlic fries.


And, their baked goods looked so good!

The cookie was dark chocolate and it had a mint cream inside. It was so good! My cousin bought the cupcakes for his family and he said the cupcakes were delicious. I’m going to have to try the cupcakes next time!

Two days ago, I went to Chiptole with a friend and I ordered the sofrita bowl with brown rice, black beans, guacamole, and salsa. It’s been my favorite lately. I was 1/3 of the way done eating when I remembered to take a picture of it. Whoops.


I also went to the park with my family last week. And then yesterday, I planned on going bowling with friends but ended up going to the park instead.


And, I’ve been loving this mini pretzel make and mini donut maker. I get to make healthy versions of not so healthy food! ha. Win-win for me. My parents bought the pretzel maker when it was on sale! Score. I’ve had the donut maker for a year now.


I guess that’s it for now. Tomorrow’s post will be about running.
