Black Bean And Quinoa Salad with Cilantro Lime Vinaigrette

I have a delicious salad recipe for you guys today.


It’s a Black Bean & Quinoa Salad with Cilantro Lime Vinaigrette. It tastes so good! I do warn you. Be careful when cutting the onions or the cilantro. I do not know which one but one of them made my eyes burn. I think it may have been the onions but the cilantro had a strong smell too. Either way, it was delicious and I will definitely make it again.


  • 1 cup dried black beans, cooked
  • 3 cups cooked quinoa (about 1 cup dry)
  • 1 red pepper, chopped
  • 1/2 red onion, minced
  • 1/4 cup cilantro, minced
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 3 tablespoons lime juice
  • 1 teaspoon cumin


  1. If you haven’t already, cook the quinoa and the black beans. Mix it together. Add in the pepper and onions.
  2. In another bowl, mix together the cilantro, olive oil, vinegar, lime juice and cumin.
  3. Mix it into the quinoa mixture.
  4. Let it marinate for 30 minutes.
  5. Enjoy!

I have been busy with school lately. I am loving all of my classes so far. It is a lot of reading. However, it is very interesting reading. I am taking GE classes this semester since all of the nutrition classes I tried adding were full. It happens and that’s okay. GE is also important to take. One of my classes I am taking right now is for my Spanish Minor. The other classes I am taking are very cultural.

Black Bean Quinoa

Let’s make this for dinner tonight. It’s Black Bean Quinoa.

Black bean salsa quinoa

It actually tastes really good! On top of that, it’s pretty rich in nutrients. Quinoa is a complete protein and you get more from the black beans. Plus, you get fiber from the black beans. Females need 25 grams of fiber a day while males need 38 grams of fiber a day. One needs 14 grams of fiber for every 1,000 calories eaten per day.  Most Americans consume 12-18 grams each today, half the recommended amount.  This recipe is a delicious way to sneak it in.

Here’ the recipe.


  • 1 cup dried quinoa, cooked
  • 1 can black beans (low sodium preferred, or you can cook your own black beans and use 3 cups of it)
  • 1 cup homemade salsa (or from the store. Look for ones low in sodium and with simple ingredients)
  • shredded cheese (optional)


  1. If you haven’t already, cook the quinoa. You can use low sodium vegetable broth to cook the quinoa to give it more flavor. You can also use a homemade broth of your choice. You’ll need 2 cups of it to cook the 1 cup of dried quinoa.
  2. Drain and rinse the black beans. Add it in with the quinoa as it is cooking.
  3. Once the quinoa is done cooking, take out the black bean/quinoa and pour into a bowl.
  4. Mix in the salsa
  5. Enjoy! Top it off with some shredded cheese.
